Rambles

Sitting in bed trying to get warm (it's 17 degrees outside) going back in forth between the computer and reading my book. Mason is taking a morning nap, which probably means he won't take his afternoon nap. See he's still transitioning from two naps to one. He's been waking up in the morning around 5:45am which has been quite challenging since I'm use to him sleeping until 7:30am. Maybe I should think about moving his bedtime back a little bit. I think tonight instead of putting him down at his usual bed time of 6:30pm I'll try 7:00pm and see how that goes. Speaking of bedtimes and sleep...Mason is trying to climb out of the crib!!! I'm not ready for my baby to move out of the crib. I have a few options, but I'm not sure which one I'm going to go with. His crib in a convertible crib, but the only probably with that is that I'm we are hoping to have another baby in the near future so it's kind of pointless to go through all of the work changing the crib into a toddler bed when another baby will need it at some point. My other two options are to put a crib tent over the crib or move him into the guest room and take the queen size mattress off the frame and put it on the floor. I'm really at a loss as to what to do and can't believe it's already time to think about this.

On another meal time for Mason has become quite a battle. He hates to sit in his high chair and it was starting to make me CRAZY. So I decided okay...I'll just let you craze. I tell you what he's eating everything now and healthy stuff too. Now he like to stand on his step stool and eat at the counter. This morning while I was making coffee I put his eggs, banana and cheerios on a plate on the counter and he sat there with his fork and ate his eggs like a big boy why I made coffee. He's such an independent thing. So with that said...any moms out there who are having trouble with there little ones eating habits I would say try not putting them in the high chair. Its really not worth all the stress.

Also, my sister (http://waltonsinaustin.blogspot.com/) told me about a crock pot recipe that's a big hit on thenest.com local Austin message board called Ka's Chicken Tacos. I made them last night and they are now my go to dinner. So easy I did all with my 25lb baby on my hip. Here's the recipes. I make a side of refried beans and put them in soft tacos. Delish!! Make this ASAP!!!

All you need:
3 chicken breasts (you may use frozen)
1 package of chicken taco seasoning
1 can of Rotel diced tomatoes and chiles (or pico de gallo)
1/2 cup water
1/4 cup of olive oil20
flour torritas
Directions:
Set crock pot on low
Add Taco Seasoning. I used McCormick's but any brand will do.
Put chicken breasts on top of the taco seasoning. Add the Rotel, water and oil.
Leave in crock pot for 6-8 hours. Around the sixth hour, turn up heat to high.
This step is optional: Pour contents of crock pot in a a deep skillet (including liquid.)Push chicken pieces to the sides of the pan, leaving a 'hole filled with sauce'.Add two tablespoons of flour or cornstarch to the 'hole' for thickening the sauce.
As the sauce thickens, use two forks to shred chicken.
